OK, so after a road trip this weekend, I noticed we now have a deep but small actual "chip" in the plastic on our hood. Any idea what could have caused this, as I thought plastic was extremely hard to chip, and what can be done to fix this chip, other than buying a new panel?

Have noticed the same thing; small rocks, stones, etc.  If the panel is painted it could be repaired.  If the color is molded in I'm not sure how the repair could be done to match the color - may be possible?
I have used plastic polish on my 2008 yellow cabrio. It takes some elbow grease, but it smooths out nicely.

Thanks! It's a molded panel. Fred, what's the brand name of this plastic polish you use, and I assume it's found at automotive parts stores?
It's a 'Mother's' product. You should be able to find it in most automotive stores.  Good luck!
